Cucumber Soup

This cool refreshing cucumber soup gets its creaminess and tang from low-fat curds and freshness from mint. It’s an excellent starter for a heartier meal. Cucumbers 1 mint and lime juice are a good source of potassium. So this starter can help our body get more potassium and potentially help lower your blood pressure. This starter has 594mg of potassium per serve. We can also have this revitalizing soup before we head on for our workout.

Ingredients Amount (g)
Cucumber, peeled250g, 1 large cucumber
Mint leaves15g, 2tbsp
Low-fat curds200g, ¾ cup
Lime juice20ml, 4 tsp
Green chili1 small
Rock saltTo taste


Cut the cucumber into cubes. We can leave the skin on for fiber and color, or peel them if you prefer

Place all the ingredients in a blender and blend till smooth

Did you know?

The rock salt, often called as sendha namak, contains trace levels of several minerals like iron, manganese, copper, and zinc. These minerals give this salt its various colours.

Chill in the refrigerator for an hour or so before serving.

Garnish with mint leaves. Do not top it with cream as the soup is creamy enough due to the presence of curd.
