This cool refreshing cucumber soup gets its creaminess and tang from low-fat curds and freshness from mint. It’s an excellent starter for a heartier meal. Recommended portion size: 1serve- 180 ml
|Cucumber, peeled||250g, 1 large cucumber|
|Mint leaves||15g, 2tbsp|
|Low-fat curds||200g, ¾ cup|
|Lime juice||20ml, 4 tsp|
|Green chili||1 small|
|Rock salt||To taste|
Cut the cucumber into cubes. We can leave the skin on for fiber and color, or peel them if you prefer
Place all the ingredients in a blender and blend till smooth

Chill in the refrigerator for an hour or so before serving.
Garnish with mint leaves. Do not top it with cream as the soup is creamy enough due to the presence of curd.
